Jicama Salsa

Ingredients:

·         2 large tomatoes, peeled, seeded, and diced

·         1 yellow pepper (capsicum), seeded and diced

·         1 large carrot, peeled and diced

·         1 cup peeled and diced jicama

·         ½ cup corn kernels (cut from 1 ear of corn)

·         ½ small Serrano chile, seeded and finely chopped

·         2 Tbsp finely hopped cilantro

·         2 Tbsp finely chopped fresh flat-leaf parsley

·         2 Tbsp lime juice

·         Salt and ground pepper

·         1 avocado, pitted, peeled, and diced
